peen-ya keen-wa

Today was a very pineapply day.  I had a mid-morning snack of pineapple Chobani and I let some of the pineapple gummy bears that are floating around the office – leftovers from our wedding candy bar – go for a swim in it.  Gummy bear yogurt is definitely a fun thing.

For lunch, I had a homemade concoction – quinoa, black beans and pineapple.  Yes, it’s true, I can never get enough pineapple.  I just love it.

I made the quinoa last night and added black beans for the taste and a little protein boost.  I seasoned it with some garlic and herb seasoning and then added some ground chipotle for an added kick.  I got heavy-handed and my quinoa end up with a big kick.  The sweet, juicy pineapple was the perfect thing to temper the spiciness, thus piña quinoa (peen-ya keen-wa) was born.

This was a great little meal made better by the fact that I was able to enjoy it outside because it was still over 80 degrees today.  Summer’s really here!

We’ll see if I can fit some pineapple into my dinner.  I’m crazy pizza (like usual) and always top mine with pineapple.  Three meals, one fruit.  I like the sounds of that!

I think my post titles are getting worse and worse.  I’ll work on that.

Yesterday Todd and I went to go see Bridesmaids.  It was hilarious and really made me appreciate how easygoing and wonderful all of my bridesmaids were throughout our wedding planning process.  If you’re looking for a good laugh, go see this movie.  You’ll laugh your butt off.

I think that the last movie we saw in the theater was The King’s Speech – which was fabulous if you haven’t seen it – and that was back in December.  It was nice to get out of the house and have a little date night.

Today, I was eating a Pomegranate Chobani and discovered that I don’t like pomegranate seeds.  I’ve never had them before and I bit down on one in the yogurt.  I had no idea they were so hard! 

Oh well, the flavor is still good and they’re easy to eat around.

After work today, Todd and I are flying out to Denver to celebrate his brother, Scott’s graduation from law school.  Congrats to Scott and yippee for a reason to visit Denver.  I love Denver and can’t wait to be there, even though it’s only for 36 hours or so.
