At the risk of sounding elderly, today  was a scorcher!

Temperatures hovered around 90° all day and while I was after work, Todd sent me this text:

100° inside?  This was getting ridiculous.  You see, we don’t have air conditioning at all.  Our thermostat tricked us, it has a “COOL” option but if you flip it to “COOL” nothing happens.  So far we’ve been getting by with fans but 100°, now that’s hot.

Thankfully we had plans to go out on a little date and have dinner and ice cream so we left as soon as I got home from work. At dinner I ordered the salmon, a big step for me since I’m just starting to eat fish.  When I saw that it came served on a “goat cheese pool”, I was in.

After dinner we walked over to one of our favorite ice cream shops and indulged in cones of Chocolate Monster and Chocolate Chip Extreme.  That ice cream was half melted before we walked out of the shop but man, it was delicious.

When we got home our apartment was so stinking hot.  I looked at the thermometer and it read 99° – not a big improvement since we left.

I decided the only thing to do was go to bed.  Somehow, about 15 seconds after I had changed into sleep clothes, we decided that this was ridiculous and that we had to go get an air conditioner.  A minute after that we were in the car, heading to Target.

We picked out the cheapest air conditioner we could find and brought it home.  We immediately realized that it wouldn’t fit in either of our bedroom windows, too big for one, too small for the other.  Todd decided that 99* was a good reason to try it anyways.

In the end, he was right – it fit in our 20″ window even though it’s 3″ smaller than the minimum width.  We both took turns standing in front of it, soaking up the cool air.

I’m guessing that our bedroom is still about 85° but that is a heck of a lot cooler than it was.

Something tells me that our bedroom will be our new favorite room in the house, forget the living room!

Since yesterday my allergies seem to have been really acting up.  I claimed that I must be allergic to work.  I still think that’s true but they’ve been so severe and a sore throat and chills joined the mix today so I’m not sure this is just allergies.  Because I wasn’t feeling the best I came right home after work, cancelled my spot at yoga class and took a nap while Todd went to go pick up a pizza.

We enjoyed the delicious pizza from Big Bob’s at our new patio table and the combo of the sun and pizza definitely made me feel a little better – if nothing else, morale improved.  A few hours later Todd was craving ice cream.  I always want ice cream and, since Todd doesn’t have a sweet tooth like I do, jumped at the chance to go get ice cream even though I was considering an 8:00 bedtime.

We decided to walk to a local store, Martha’s Vineyard, to pick up a pint of ice cream.  We brought spoons with us so we could eat our ice cream on the way home.  I noticed my reflection in the spoon so we had a mini spoon photoshoot.

When we got to Martha’s Vineyard we ran into a couple of friends including my former roommate, Erin.  She recently got a new puppy and I got to meet her for the first time.

That’s my “I want one, can we get one please???” face.

I’ve been having major puppy lust lately but, Todd’s not that into it plus our lease doesn’t allow dogs and we’re locked in here for 14 more months.  Maybe by August 2012 Todd will be ready for one.

We decided on a pint of Ben and Jerry’s Half Baked Fro-Yo and got to work on it as soon as we started walking home.  It’s one of my favorite flavors and the fact that it comes in less-guilt frozen yogurt form is a major bonus.

As you can see, we enjoyed it.  And I’m sure it’s helping to clear up my stuffy nose.  Ice cream’s a cure-all, right?

Speaking of ice cream.  Remember those cookies and cream brownies that I made the other day?  On Monday night I got my wish and ate one warm with ice cream and hot fudge.

Yup, that was the jam.

cancun honeymoon (day two)

You’re probably getting tired of my honeymoon gloating by now so I will be brief.

We spent yesterday at a sister resort, Cancun Palace.   As guests of the Sun Palace we have access to all of the Palace Resorts which is a fun perk.  Needless to say, the resort was gorgeous as well.

We really enjoyed the swim up bar and what may have been the world’s best mojitos.  I think that mojitos will be my cocktail of choice this summer.

I was also a big fan of the ice cream bar.  They had such interesting toppings available.  I went for green sprinkles, froot loops and a cookie on top, too make sure it was sweet enough.

Today we’re going to rent a car and visit Tulum, an archaeological site and go snorkeling.  It should be a fun day and I’m excited to see more of the area.

hola desde cancun!

So…we’re married!

After an amazing wedding day (more to come on that later, I promise) Todd and I woke up this morning as husband and wife.  What an amazing feeling.

We met up with family for a quick Mother’s Day brunch at the J.W. Marriott’s (the hotel we stayed at last night) restaurant, six.one.six which was delicious as always.

After that we went straight to the airport and after a delay, headed towards Cancun via Atlanta to start our honeymoon.  The first leg of our trip from Grand Rapids to Atlanta was first class.  It was my first time being in first class and let me tell you, I could get used to that.

First we got to board right away then they brought us wine before take off then wine again after departure.  THEN they brought us snacks.  Free snacks.  Not just peanuts and a few pretzels, I got a Twix bar.  Todd got red wine and Sun Chips.  It was awesome.

My white wine and Twix was the perfect snack to enjoy while catching up on all of the details of the royal wedding.

We had a short layover in Atlanta and enjoyed a treat at Ben and Jerry’s – last time I was at ATL it was Lent and I had to resist the Ben and Jerry’s, I was so glad to indulge this time!

The flights to Cancun wasn’t long and I slept most of the way.  Thankfully, I woke up in time to take in the first view of the coast of Mexico.

We arrived to our hotel only about 45 minutes after landing and it’s amazing.  We were greeted with cocktails and couldn’t be happier with our chice.  The resort is called the Sun Palace.  Our room is gorgeous and we can see the ocean from our balcony.

We quickly went to find a place for dinner and choose one of the resorts four restaurants.  It was called Steak but I ended up with a vegetarian selection.

After dinner we took a walk on the beach.  A lovely way to start a honeymoon.  I can’t wait to see what this place is like during the day!

This morning I woke up and thought, I’m allowed to eat ice cream again – yay!  Naturally, the only way to celebrate that was by eating ice cream for breakfast.

There were fresh berries and the waffle was whole grain plus, I opted for frozen yogurt so it was a semi-balanced breakfast, right?  Okay, I’m not fooling anyone.  This wasn’t the healthiest start to the day but it sure was delicious.

Actually, before I even had breakfast I mixed up the dough for Toffee Studded Chocolate Chunk Oatmeal Cookies a la Lauren from Keep it Sweet.

Here’s the recipe:

1/2 lb (2 sticks) unsalted butter, softened

1 cup firmly packed brown sugar

1/2 cup granulated sugar

2 eggs

1 tsp vanilla

1/2 cup all purpose flour

1 cup whole wheat flour

1 tsp baking soda

1 tsp cinnamon

a pinch of salt

3 cups of quick or old-fashioned dry oatmeal

1 cup of semi-sweet chocolate chunks (I like lots of chocolate so I went to 1 1/2 cups per Lauren’s suggestion)

1/2 cup toffee bits

Directions:

Mix together flours, cinnamon and baking soda.  Set aside.


In large bowl, beat together butter and sugars until creamy.

Beat in eggs and vanilla. 

Make sure to scrape sides of bowl and mix some more.

With mixer on low, carefully add in flour mixture.  

Once all ingredients are well-combined, stir in oats.

Stir in chocolate chunks and toffee bits until well-mixed.

Now, refrigerate your cookie dough for 2 hours or overnight.  This is necessary to avoid flat cookies.

Once you are ready to bake, pre-heat oven to 350 degrees.

Line cookie sheets with parchment paper. 

Drop heaping tablespoons of dough about 2 inches apart on baking sheets.

Bake in oven for 8-10 minutes or until centers of cookies appear cooked and edges are light golden brown.


These bad boys are delicious!  I love the chunks of chocolate, they always taste so much more substantial than chocolate chips.  If these are decadent enough for you, Lauren also has a recipe for a sandwich version of these cookies with peanut butter frosting.  Sounds pretty tasty, no?

While these cookies were chilling in the fridge, I went to meet my parents for an Easter brunch.

We had a long leisurely meal which was really nice.  I don’t have a meal alone with my parents that often and it was really good to just chat with them.

After brunch my mom came over to help me with packing for the move.  She’s a good person to have around when you need to get things done.  We worked for a few hours and made a lot of progress.  You should see the pile of boxes that are ready to move – not to mention the 3 or 4 trash bags and 3 or 4 more full of donations.  It feels so good to get rid of so many things that I don’t need anymore!

Also, Todd was home by the time I got there so he filled me in on all of his bachelor party shenanigans.  It sounds like they had a great time and it made me really excited for my bachelorette party next weekend in Chicago.

All in all this was a really nice, laid back but productive weekend.  Now only 8 more work days until I’m off for the wedding!  It couldn’t be here soon enough.  I’m ready to be a missus.

P.S.  You have to try Jess’s Hobo Margaritas.  I made one last night and it was so yummy!  I even bought festive cups to drink them out of, delish!

First of all, happy happy happy birthday to my big sister, Emily!  She’s off in LA celebrating her big day and I wish I could be there.  It sounds like she is having so much fun, I think she’s at the beach right now.  Keep celebrating your day sister, I love you!

This morning I didn’t wake up until 8:34.  It was glorious.  I slept for almost exactly 8 hours and it felt great to not have anything to get ready for.  I had a quick bowl of cereal (in bed) and then putzed around until I had to leave for yoga.

Yoga class was hot and sweaty today.  Well, that’s kind of a given.  Today’s class was exceptionally hot and sweaty and it felt so good!  I left feeling stretched out, firm and loose.  I also left feeling pretty disgusting, sweat-wise and not smelling very good.  That didn’t stop me from stopping by the grocery store on the way home.  The big supermarket I like to shop at is a solid 15 minute drive from the house and I didn’t see the point in going home and showering and then making a special trip back when I have to pass it on the way back anyways.

When I got to Meijer it was a madhouse.  I didn’t realize that everyone would be doing their Easter shopping today.  I had to park my cart and wait for people multiple times and was almost run into a bunch of times too.  No big deal though.  I was grocery shopping and I loved it just the same.  Plus, I left the grocery store with a cart full of goodness.

Yes, there are three pints of ice cream in the corner.  After 40 days without ice cream, it was hard for a girl to decide what to start with.  I can’t wait to dig into those tomorrow!

When I got home I was staaaaaarving.  I had a craving for watermelon while I was at the store so I threw together a little fruit salad and ate it with a Think Thin bar.

The fruit was delicious and the bar was…a meal bar.

I’ve come to that conclusion that  I don’t like meal bars in general. They always taste a little chalky.  The flavor of this was okay but I didn’t even finish it because I figured I’d rather eat some chips and hummus or something after I shower.

So that’s where I am right now.  Post-lunch, pre-shower and putting off packing and thank you notes for now.  But only until after I shower, I swear.  Then it’s pack, pack, pack and thank, thank, thank.

walking a fine line

I have a confession to make.  You see, Todd and I gave up ice cream for Lent.  This is a huge struggle for me because I love ice cream.  It’s also a huge challenge for me because ice cream seems to be taunting me.  Last weekend in Chicago, the restaurant my sister and I had dinner at had a dessert that included  salted caramel ice cream, I couldn’t wait to try it…until I realized I’d have to wait until Easter.  The next day, we went to a grocery store that was giving away free samples of the most amazing sounding Nice Cream.

Lavender Vanilla AND  Carrot Cake!?  Oh my gosh, they all sounded amazing, but I resisted.

And then at brunch the next morning, a case of Palazzolo’s Gelato – my favorite!

All of those beautiful gelatos and still I resisted.

Then, today at work, my friend Mary brought me a cup of pomegranate frozen yogurt.  With sprinkles.

Frozen yogurt isn’t technically ice cream, right?  Yes.  I ate this.  Every last spoonful.  Todd told me it was okay but that I was walking a fine line – I’m so dangerous!  Thank you, Mary, for the fro yo and for never making me feel guilty when I’m in the mood to push the limits.

As soon as I left work, I headed to the jeweler to pick…(drum roll please!)…Todd’s wedding band!  That’s right, I got his and mine will be ready to pick up on Saturday so we’re almost as good as man and wife.  What a crazy feeling!  Todd tried it on when I got home and we both had a moment of mild freak out because it is weird to see a ring on a finger that has never worn one before.  A good kind of weird though, only 38 days until that ring will become a permanent fixture on Todd’s left hand.

While I was at the mall I did a little browsing for myself and, even though I tried to resist, I ended up at J. Crew.  I can’t help myself, I love their clothes and almost always walk away with something new.  Today was no different, I found a cute little sundress that I can wear on our Mexican honeymoon.

After the mall, I rushed over to the Funky Buddha for a Shake your Asana class.  I love this class!  They play music the whole time and Cindy, the instructor, really gets us sweating and does a great job of keeping it interesting and stretching us out.

I dragged my sweaty self home after class and made a quick dinner.  Just a can of soup, bagel crisps and some cheese.  Nothing fancy but I was loving my Chicken Tuscany soup!

After a day of work, running some errands and powering through a Shake your Asana class I am one tired girl.  Thank goodness that the Top Chef: All Stars season finale is on right now.  I love this show!  It’s the perfect way to relax on a Wednesday night.
